This dip could not be more easy to make. So scrummy. We like to eat it with pan-fried halloumi and crudités.
STEP 1
Peel and end the garlic cloves and put in a silver foil parcel. Cook in the centre of the oven for 15 minutes at 180 degrees.
STEP 2
Wash and cut the cauliflower. Steam the cauliflower, in a steamer or in the microwave. If microwaving, put in a microwave safe dish, cover with clingfilm and pierce multiple holes. Microwave on 1000 watts for 6-8 minutes, until soft.
STEP 3
Blend the cauliflower and garlic with lashings of olive oil.
TO SERVE
Serve with crudités and pan-fried sliced halloumi.
